Originally from New Caledonia, I draw upon my French culture and background to design and produce menus and dishes at the Star Gold coast in the exclusive dining areas and VIP guests.

I moved to the GC in 2008 because of the similar lifestyle to my island home. With more than 15 years of experience in the hospitality industry I really focus on working with local and Australian ingredients being that we are very lucky to have an amazing selection right at our door step.

An important part that I value is mentoring the next generation of chefs and giving them a platform to experiment and develop as a young chef, I think giving back your time and knowledge to passionate chefs is one of the most rewarding part of being a chef.

Specialty Dish

My specialty dish is a dish close to my heart that I grew up eating when I was a child, it’s a marinated snapper with lime and fresh coconut cream. This dish can be done with almost any good quality sashimi fish which makes it easy to recreate. Usually served with a side of warm steamed rice and a crispy baguette to soak up the sauce.

Favourite Seafood to Work With

My favorite seafood would have to be prawn! New Caledonia is known for the paradise blue prawn and I was lucky enough to eat it often while growing up.
