Born and raised in Aotearoa, New Zealand, Amber Doig embarked on her culinary journey in Sydney, where she gained valuable experience under the mentorship of renowned chef Vanessa Martin. Seeking further growth, she ventured to New York City, where she honed her skills under the guidance of Alex Stupak at the Empellón Restaurant Group, immersing herself in the world of Mexican cuisine. Upon returning to Sydney, Amber joined Applejack Hospitality and became Head Chef at The Butler, bringing her global experiences and deep connection to Aotearoa’s unique ingredients to create a distinctive menu.

Chef Doig has a particular fondness for raw fish and ceviche-style dishes, incorporating seasonal fruits, vibrant colors, and punchy flavors. She also deeply appreciates the diversity of Australian seafood, particularly the wide range of oysters and the versatility of prawns.
