Jake Nicolson began his culinary journey at the esteemed Lake House in Daylesford, Victoria, under the guidance of Alla Wolf Tasker. His talent quickly shone through, earning him prestigious accolades such as the Borges/Ferran Adria culinary Scholarship and representing Australia at the International Food & Wine Festival in Dubai. In 2008, he was named Appetite for Excellence Young Chef of the Year, leading to his participation in the prestigious San Pellegrino Cooking Cup in Venice, where he placed third. Jake’s impressive resume also includes a stint at the renowned El Bulli in Spain and acclaimed London restaurants such as The Vineyard, The Square, and The Ledbury.

Prior to joining the Ghanem Group in 2013, Jake served as Head Chef at Circa the Prince in Melbourne, where the restaurant earned two Hats from The Age Good Food Guide 2012. Since joining Ghanem Group, Jake has overseen the successful launch of several acclaimed venues, including Blackbird Bar, Dining and Events, Donna Chang, Boom Boom Room, Bisou Bisou, and Iris Rooftop in Brisbane, as well as Le Bon Ton in Melbourne. He also oversees Byblos Bar & Restaurant in both cities.
