About

Paul Smart’s culinary journey began at Stamford Plaza Hotel in Australia, where he honed his skills for eight years. His international career has taken him to esteemed kitchens like The Ritz London, where he cooked for HRH Queen Elizabeth II, and El Bulli, voted Best Restaurant in the World (2006-2009). Back in Australia, he played a pivotal role in the multi-award-winning restaurant Room 81 and won the Gold Box Restaurant Challenge three times. He also emerged victorious twice on Iron Chef Thailand while serving as Executive Chef at SO Sofitel Bangkok.

In 2020, Paul joined JW Marriott Gold Coast Resort & Spa, where his passion for sustainability shines through the resort’s signature JW Garden. This garden-to-table concept allows chefs to elevate their menus with seasonal ingredients grown on-site. Paul’s dedication to local sourcing is further exemplified by the Producer Spotlight Series, where he collaborates with regional partners to create unique dining experiences.

Favorite Seafood to Work With

Chef Smart enjoys working with shellfish like prawns, bugs, scallops, and mussels. He appreciates their freshness, interesting textures, and ability to hold flavours exceptionally well.
